Spiced Orange Slices

 

 

Delicious with ham pork or game.

 

10 large thin skinned oranges, cut into 5mm slices

600ml white wine vinegar

1 kg granulated sugar

1 ¼ cinnamon sticks

8 g whole cloves

6 blades of mace

 

Place the orange slices in a large pan and cover with water. Simmer gently partially covered with a lid until the peel is tender, about 40 minutes (the peel should be very soft when pressed between finger and thumb).

 

Meanwhile put all the other ingredients in a pan and boil for a few minutes to make a syrup.

 

Drain the oranges, reserving the liquor, and place in the prepared syrup. Simmer, uncovered, for another 30 – 40  minutes, until the oranges are translucent. Transfer to a bowl and leave overnight.

 

Next day, boil the oranges in the syrup until they are thoroughly cooked.  Pack the oranges into warm sterilized jars adding syrup to cover. Seal and leave for 6 – 8 weeks before eating.  Use the reserved liquor for topping up during storage as the oranges absorb the syrup.

 

 

Tranches des oranges épicé

 

 

Délicieux avec le jambon (cru ou cuit), du porc ou du gibier.

 

10 grands oranges, coupée en tranches de 5 mm

600 ml vinaigre de vin blanc

1 kg sucre en graines

1 ¼ bâtons de cannelle

8 g clous de girofle

6 brins de macis

 

Mettez les oranges dans un fait tout et couvre avec de l’eau froide. Chauffez doucement avec un couvercle et laissez bouillir lentement pendant 40 minutes jusqu’à le peau des oranges soit tendre.

 

Dans un autre casserole, ajoutez les ingrédients (sauf les oranges).  Chauffez doucement et remuez jusqu’à la fonte du sucre. Laissez bouillir pendant 5 minutes pour faire un sirop.

 

Égouttez les oranges, mettez dans le sirop et laissez bouillir lentement, sans couvercle pendant 40 minutes, jusqu’aux oranges soit translucide. Transférez les oranges et sirop dans un saladier ou jatte. Laissez jusqu’au lendemain.

 

Le lendemain, réchauffez les oranges et le sirop et laissez bouillir jusqu’aux oranges soit cuit.  Tassez les oranges couvert avec le sirop,  dans pots de verre pendant qu’il est tiède avec des couvercles en plastique.

 

Laissez reposer pendant 6 – 8 semaines en préférence avant de déguster.

Smoky Tomato Chutney

 

Great to serve with hamburgers, sausages and lovely with a sharp Cheddar cheese.

 

110 g sun blush tomatoes

1.15 kg ripe tomatoes

1 tablespoon hot smoked paprika

1 tablespoon sweet mild paprika

1 dessert spoon coriander seeds

1 dessert spoon mustard seeds

2 cloves garlic, peeled and chopped

2 large onions peeled and chopped

110 g light muscovado sugar

275 ml red wine vinegar

1 heaped teaspoonful of salt

 

Drain the sun blush tomatoes of excess oil and pat dry with kitchen paper.

 

Heat a small heavy based frying pan and dry roast the coriander and mustard seeds over a medium heat, turning once, for 2 minutes, to draw out their flavour.  Then crush them together with a pestle and mortar.

 

Using a food processor, chop the sun blush tomatoes into 5mm pieces.  Add the tomatoes and chop them until they are 5mm pieces also.  Pour the whole lot into the pan.

 

Add the garlic and onions to the food processor and chop until they are 5mm pieces.  Add to the tomatoes.  Add the spices, paprika, (hot and mild), sugar, vinegar and salt.

 

(If you are not using a food processor, make sure you chop the onions and tomatoes by hand to a uniform size (5mm))

 

Bring everything to a simmering point, stirring all the time, then lower the heat and let it cook gently for 3 – 3 ½ hours stirring occasionally to prevent the mixture sticking.

 

The chutney is ready when all the liquid has been absorbed and the mixture has thickened to a nice soft consistency.

 

When it is ready, allow it to cool slightly and then pour it though a funnel into warm sterilized jars. Cover and seal, then store in a cool dark place for 8 weeks to mellow before using.

 

 

Chutney des tomates fumées

 

 

A manger avec hamburgers, chipolatas ou un fromage comme cheddar anglais.

 

110 g tomates sèche au soleil

1.15 kg  tomates

1 cuillère de service paprika fumée

1 cuillère de service paprika doux

1 cuillère de soupe ds graines de coriandre

1 cuillère de soupe des graines de moutard

2 gousse d’ail, épluché et coupée

2 grand oignons épluché et coupée

110 g sucre de muscovado

275 ml  vinaigre de vin rouge

1 cuillère a café de sel

 

Égouttez les tomates sèche et séchez avec du papier de cuisine

 

Chauffez un poêle et mettez dedans les graines de coriandre et moutard. Chauffez doucement pendant 2 minutes et après, écrasez dans un mortier avec un pilon.

 

Coupez les tomates sèche, tomates, oignons, en morceaux de 5 mm, et l’ail en petit morceaux. Mettez dans un fait tout avec les épices, sucre, vinaigre et sel.

 

Chauffez doucement et laissez bouillir jusqu’à la fonte du sucre. Laissez cuire au feux doux pendant 3 – 3½   heures. Ne laissez pas la confiture brûler au fond du  fait-tout. C’est prêt quand le chutney est riche, épais et réduit.

 

Mettez en pots de verre pendant qu’il est tiède avec des couvercles en plastique. Laissez reposer pendant deux mois en préférence avant de déguster.

Spiced Pickled Agen Prunes in Armagnac

 

 

Serve with cold meats or pates.

 

900 g  Agen Prunes, stones removed

6 cloves

2 blades mace

6 allspice berries

5 small sticks cinnamon

5 tablespoons Armagnac

1 tablespoon Lapsang Souchong tea

570 ml red wine vinegar

225 g light muscovado sugar

 

5 350 ml jars, sterilized.

 

Begin this the night before.  Measure 1.2 litres of water into a measuring jug. Stir in the tea and allow it to steep for 3 minutes.  Meanwhile put the prunes into a large non-metallic bowl.  Strain the tea and allow it to cool completely before pouring it over the prunes.  Cover and allow to stand and soak overnight

 

Next day, put the vinegar, along with the sugar and spices into a medium sized saucepan, bring everything slowly to the boil and allow to simmer for 15 minutes. Meanwhile, drain off the tea and pack the prunes into hot sterilized jars, filling them as full as possible.

 

Transfer the liquid from the pan to a jug and carefully pour over the prunes, swivelling the jars to make sure they are completely covered.

 

Finally, spoon an tablespoon of Armagnac into each jar and cover immediately with a vinegar-proof lid.

 

Store in a cool dark place for 3 months.  They will improve as they mature.

 

Pruneaux d’Agen en Armagnac macéré avec les épices

 

 

A manger avec les viandes froides ou terrines

 

900 g  Pruneaux d’Agen, dénoyautés

6 clous de girofle

2 brins de macis

6 graines de piment de la Jamaïque

5 petits bâtons de cannelle

5 cuillères de service d’ Armagnac

1 cuillère de service du thé Lapsang Sou-chong

570 ml vinaigre de vin rouge

225 g sucre muscovado

 

C’est a commencer le jour avant.  Mesurez 1.2 litre de l’eau chaud dans un carafe. Ajoutez le thé et laissez pendant 3 minutes.

 

Mettez les pruneaux dans un saladier. Filtrez le thé et laissez fraîchir.  Versez le thé vers les pruneaux.  Couvert avec un torchon et laissez pendant la nuit.

 

Le lendemain, mélangez le vinaigre, sucre et les épices dans un poêle, chauffez doucement et laissez bouillir pendant 15 minutes. Pendant ce temps, ajoutez les pruneaux, (jetez le thé) et les mettre dans pots de verre chaud.

 

Transférez la liquide (vinaigre, sucre et épices) dans une carafe et versez sur les pruneaux.

 

Finalement versez une cuillère de service d’Armagnac sur chaque pot des pruneaux. Couvrez avec les couvercles en plastique.

 

Laissez reposer pendant trois mois en préférence avant de déguster.

Pickled Peppers and Courgettes

 

 

Good with pates as the crunch cuts through the richness

 

2 large red peppers

1.15 kg small courgettes

350 g red onions peeled

850 ml white wine vinegar

225 g demerara sugar

25 g mustard seeds

1 teaspoon celery seeds

1 rounded teaspoon ground turmeric

½ teaspoon ground mace

2 medium sized red chillies, de-seeded and thinly sliced

40 g sea salt, lightly crushed

 

4 x 500 ml jars, sterilized

 

Begin this the night before.

 

De seed the peppers, cut out any pith and slice into 5 cm strips.

Trim and slice the courgettes into diagonal 1 cm slices.

Halve the onions and cut them into 5mm slices.

Pack the vegetables into a large colander in layers, sprinkling each layer with salt. Put a dish underneath to catch the juices and another with a weight on top and leave them overnight.

 

Next day, rinse the vegetables under cold, running water, really press them to get rid of any excess water and pat them dry with a tea towel. Then leave them spread out on the cloth for about 2 hours to dry.

 

After that, place the vinegar, sugar and spices including the chillies, in a saucepan and stir them together over a medium heat until the sugar has completely dissolved. Let it all simmer for about 3 minutes then add the vegetables, simmering for another 3 minutes.

 

Pour the pickle into the hot sterilized jars.  Seal with vinegar- proof  lids and store in a cool dark place for a month before using.

 

 

Courgettes et poivrons macéré dans du vinaigre

 

 

A manger avec pâté de foie

 

2  grand poivrons rouge épépine et coupée en tranches

1.15 kg petit courgettes

350 g oignons rouge épluché et coupée

850 ml vinaigre de vin blanc

225 g sucre de canne

25 g graines de moutard

1 cuillère de café des graines de céleri

1 cuillère de café de curcuma moulu

½ cuillère de café de macis moulu

2  piments rouge épépiné  et coupée en tranches de 2 mm

40 g sel de mer

 

4 x 500 ml pots de verre, stérilisée

 

A commencer le jour avant.

 

Epepine les poivrons et les couper en tranches de 5 cm

Coupez les courgettes en tranches de 1cm diagonale

Coupez les oignons en tranches de 5 mm

Tassez les légumes dans un passoire en couches et saupoudrer chaque couche avec du sel de mer. Mettez un saladier dessus pour le jus et placez une assiette dessous avec un poids et laissez pendant une nuit.

 

Le lendemain, lavez les légumes avec de l’eau froid et laissez sécher pendant 2 heurs sur un torchon.

 

Mélangez le vinaigre, sucre, épices et piments rouge dans un poêle au feu doux et remuez jusqu’à la fonte du sucre. Laissez cuire à feux doux pendant 3 minutes. Ajoutez les légumes et laissez cuire a feux doux pendant 3 minutes encore.

 

Mettez les légumes en pots de verre pendant qu’il est tiède avec des couvercles en plastique. Laissez reposer pendant un mois en préférence avant de déguster.

Mango Chutney

 

 

Eat with curries

 

1Kg (2¼ lb) firm mangoes

50g (1½ oz) fresh root ginger, peeled

50g (1½ oz) medium strength red chilli, de-seeded

250 ml (9 fl oz) cider vinegar

200 g (7 oz) caster sugar

 

Dice the flesh of the mangoes, discarding the large, flat stones and the skin.

Cut the ginger and chilli into fine julienne strips.

Place all the ingredients in a pan and bring slowly to the boil, stirring continuously until the sugar has completely dissolved.

Simmer uncovered for 1 hour.

Spoon into warm sterilized jars and seal.

 

 

Chutney de mangues

 

 

A manger avec curry

 

1Kg  mangues épluchées et coupées en morceaux de 1cm

50g  gingembre de tige, épluché et tranchée comme julienne (1 – 2mm)

50g  de piment rouge tranchée en petits morceaux comme julienne (1 – 2mm)

250 ml vinaigre de cidre

200 g  sucre saupoudrée

 

 

Coupez les mangues en morceaux de 1cm et jetez le peau et le noyau

Coupez le gingembre et le piment rouge en tranches comme un julienne

Mettez les ingrédients dans un fait tout. Chauffez doucement et remuez jusqu’à la fonte du sucre.

 

Laissez bouillir lentement sans couvercle pendant une heure

 

Mettez en pots de verre pendant qu’il est tiède avec des couvercles en plastique.

 

 

 

Sweet Pickled Onions

 

 

1.35 kg small pickling onions

50 g cooking salt

2 – 3 sprigs fresh tarragon

1 – 2 fresh green or red chillies, halved

1.5 litres white wine vinegar

425 g granulated sugar

 

Put the onions in to a large bowl and cover with boiling water. Leave for about 20 seconds and then pour off the water. Cover with cold water, then peel the onions, keeping them under the water when peeling. Put them into a bowl, sprinkling each layer with salt. Cover with a clean cloth and leave overnight.

 

Rinse well and shake off as much water as possible. Pack into sterilized jars adding a washed sprig of tarragon and half a chilli to each jar.

 

Boil the vinegar and sugar together for 1 minute.  Pour the hot vinegar over the onions. Seal and store for 2 – 3 weeks before eating. Use within 6 months.

 

Oignons sucre macéré dans du vinaigre

 

 

A manger avec les viandes cuit, des salades, ou les fromages anglais (cheddar par exemple)

 

1.35 kg petits oignions blanc (ou petits échalotes)

50 g sel fine

2 – 3 brins d’ estragon

1 – 2  piments rouge (ou vert) tranchée en deux

1.5 litres vinaigre de vin blanc

425 g sucre en grains

 

Mettez les oignions dans un saladier et couvrez avec de l’eau bouillant. Les laissez pendant 20 secondes. Égouttez les oignions. Couvrez les oignions avec e l’eau froide et épluchez les oignions.  Mettez les oignions dans un saladier  et versez le sel dessus.  Mélangez bien et laissez a l’abri pendant 24 heurs, couvert avec un torchon.

 

Âpres 24 heurs, rincez bien dans l’eau froide et séchez.

 

Mettez en pots de verre avec un brin de l’estragon et une tranche de piment rouge

 

Versez le vinaigre dans un fait tout avec le sucre et fait bouillir doucement pendant 1 minute.

 

Versez le vinaigre chaud sur les oignions. Fermez avec les couvercles en plastique et gardez pendant 2 – 3 semaines avant de déguster.  Utiliser avant 6 mois.
