Chutney de poivron rouge, tomates et citronnelle

A manger avec terrines, rôti de viandes cuites ou fromage.

Ingrédients

  • 4 cuillères de service de l’huile d’olive
  • 225 g oignons rouge, coupées finement en morceaux
  • 450 g poivrons rouge, enlevez les grains et coupées finement en morceaux
  • 1/2 cuillère a café de sel fine
  • 1/2 cuillère a café de quatre épices
  • 1/2 cuillère a café de macis
  • 1/2 cuillère a café noix de muscade
  • 1/2 cuillère a café gingembre frais coupée finement
  • 1 branche de citronnelle coupée finement en morceaux
  • 450 g tomates, épluchées et coupées
  • 100 g raisins sec
  • 1 gousse de l’ail épluchée et coupée en morceaux
  • 225 g sucre
  • 150 ml vinaigre de vin blanc

Chauffez l’huile dans un fait tout, mettez les oignons dedans et laissez cuire pendant cinq minutes sans bruler.

Mettez dans le fait tout les poivrons rouge, le sel, les épices, gingembre et citronnelle. Chauffez doucement a feux doux pendant 10 minutes et remuez de temps en temps.

Mettez les tomates, raisins, ail, sucre et vinaigre dans le fait tout.  Laissez bouillir lentement et remuez jusqu’à la fonte du sucre.  Laissez cuire au feux doux pendant 1 1/2 heures.

C’est prêt quand le chutney est riche, épais et réduit.

Mettez en pots de verre pendant qu’il est tiède avec les couvercles en plastique.

Laissez reposer a l’abri pendant un mois avant de déguster.

Red Pepper, Tomato and Lemongrass Chutney

Delicious with coarse pates and terrines, roast and grilled meats and cheese.

  • 4 tablespoons olive oil
  • 225 g red onion, finely chopped
  • 450 g very ripe red peppers, de-seeded and finely diced
  • ½ teaspoon table salt
  • ½ teaspoon ground allspice
  • ½ teaspoon ground mace
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon grated fresh ginger
  • 1 stick of lemongrass, finely chopped
  • 450 g very ripe tomatoes
  • 100 g seedless raisins
  • 1 garlic clove peeled and chopped
  • 225 g granulated sugar
  • 150 ml white wine vinegar

Heat the oil in a large pan, add the onion and cook gently for 5 minutes without browning.

Add the peppers to the pan with the salt, spices, ginger and lemongrass.

Cook for 10 minutes over a low heat stirring occasionally

Skin the tomatoes by covering with boiling water for a few minutes and then slipping off the skins. Chop and add to the pan with the raisins, garlic sugar and vinegar.

Bring to the boil slowly, stirring frequently to dissolve the sugar, then simmer very gently for about 1 ¼ hours, until thick.

Ladle in to warm sterilized jars and seal.

Store in a cool dark place for at least one month before using.
